A grease trap is a necessary part of the wastewater system in a commercial kitchen. The wastewater flows through the grease trap before it moves on to the sewer system, and it “traps” the greases and solids while letting the water pass through. Grease is about 15% less dense than water, and it isn’t dissolved into the water.
Grease traps need to be cleaned about every four to six weeks, depending on the amount of use your water system sees. A trap that is not properly maintained will not function properly, and grease and oil will be allowed to enter the wastewater system. A blocked drain can result in the grease backing up into the sink. This backup will cause quite the problem and require extensive sanitizing to get things back to working condition.
The process of cleaning a grease trap can be rather extensive. There are often five to ten centimetres of solid grease at the top of the trap that must be scooped out, and then the remaining liquid grease and oil have to be removed. Once all is removed, the entire trap should be scrubbed clean. Then the intake and outtake pipes need to be thoroughly cleaned out. At this point, water should be able to move freely through the trap, if it does not, the pipes will need to be snaked clean.
